Day 6: A showcase dairy, a guest, and the wizard

Winners' Trip

Once again, the weather did not cooperate: low-hanging clouds covered the Säntis peak, and without a clear sky there was no reason to take the cable car to the top.

Hence we started the day with the visit to the showcase dairy Schwägalp. First, we met Marco Bolt, the president of the Alpkäse-Committee, who had agreed to join us for the last day of the trip. Werner Näf, the director of the dairy, gave us a detailed tour and we could watch his crew at work. The tasting of the different stages of Alpkäse was a highlight of the visit.

A half-hour drive brought us to a special place: Lichtensteig, the home of award-winning cheesemaker Willi Schmid, whom they call the wizard. Over more than an hour, he let us in in his huge knowledge, the very unique way he approaches his trade. We continued the discussion during lunch in the event room of his new dairy. And just look at the plate, full of the wizard's creations.

Then we did the final ride, to the Mövenpick hotel at Zurich-Airport where during dinner we reflected on the week's events.
