Located on the southern slopes of the San Gottardo (St. Gotthard), probably the most famous Swiss mountain pass, Alpe Fieudo is owned by Ari Lombardi. With his company Agroval SA, he also operates a dairy in Airolo at the entrance to the Leventina Valley.
Fieudo is one of the higher Alps in the Adopt-an-Alp program. The meadows range from 6600 to 8200 ft. a.s.l. and are divided into 3 locations. Therefore the 93 cows and the mobile milking device have to be moved 3 times during transhumance.
There are four employees on the Alp, a cheesemaker, and an assistant as well as a herdsman, and a helper.
Alpe Fieudo produces an Alpage Ticinese DOP (like AOP). The curd is warmed with a wood fire heated boiler. The wheels are aged between 50 and 55 degrees Fahrenheit and at a high humidity of 95% which produces the typical greyish rind.
Agroval started its activity in the cheese sector more than 15 years ago. Throughout the year, the dairy in Airolo gets the milk from 10 local farms and produces over 200 tons of raw milk cheeses annually that mature in natural slow conditions in natural cellars located in the foothills of the Saint Gotthard Pass. The products are Swiss Mountain certified.
